Capitanio Amarone della Valpolicella is made from grapes specially dried for 3-4 months in well ventilated rooms beneath the winery's roof. A soft pressing is followed by a slow fermentation and aging in large oak casks (botti) for two years. We recommend enjoying Capitano Amarone della Valpolicella young, but the enologist feels that the wine can be matured for an additional 8-10 years. |
