EAU-DE-VIE AND GRAPPA

Clear Creek Distilery

Steve McCarthy started Clear Creek Distillery fifteen years ago because he wanted to find the best use for fruit from his family's orchards. During his travels in Europe Steve had become accquainted with a number of traditional European spirits, among them an Eau-de-Vie made from Williams Pear. He knew that with the wonderful fruit they grow in the Pacific Northwest he could make brandy just as good as that he had tried in Europe, and that was the origin of Clear Creek Distillery.

At Clear Creek they have married European traditional brandy-making techniques (see left) with the finest fruit from their own Oregon orchards (shown above and below) to produce fruit Eau-de Vie, Grappas, Brandy and Whiskey. The brandies are internationally and nationally known and respected, served in the world's best restaurants and appreciated by connoisseurs everywhere.

Clear Creek received the highest award given for any eau de vie worldwide at the World Spirits Competition in San Francisco held on September 15th -17th, 2000.

Pear in a Bottle

In addition to normally bottled Pear Brandy, they do a special bottling of Pear-in-the-bottle. To make pear-in-the-bottle they actually grow the pear inside of the bottle in the orchards, and then fill it with the pear Eau-de-Vie. This practice of growing pears in the bottle is traditional in Alsace where pear brandy has been made for hundreds of years. Pear-in-the-bottle is highly labor intensive, requiring weeks of work both putting the bottles on the tree at the beginning of the summer when the fruit are small and removing them when the pears are fully mature.
